Single Bevel (Kataba)





Made of steel and soft iron.
First,the soft iron is processed,hand forging the part that goes into the handle‘komi’.
Next,the steel is processed to match the length of the soft iron.joining material is laid on the soft iron,the steel is placed on top of the soft iron and heated in the furnace to 1050 degrees.
From there,the temperature is lowered,and the forging process is separated.By doing so,the inside of the blade is strengthened.This results in a long-lasting
blade that’s easy to sharpen and won’t easily chip.
Once the forging is completed,the shape of the knife is perfected with a grinding stone.
Then,the blade is tempered,quenched and sharpened with a rotating whetstone.
Lastly,the knife is buffed and polished.
*Although it may seem that forging is the main exhibit,there are actually 25-30 steps in the process to create a final product.

Double Bevel (Ryoba)







Made of steel and soft iron.
First,the soft iron is processed,hand forging the part that goes into the handle‘komi’. Next,a tool called‘tagane’is used to create an indent where the steel will be inserted.
From there,the steel is processed to match the length of the soft iron.joining material is laid into the indent of the soft iron and the steel inserted.After sandwiched together,the knife is heated in the furnace to 1050 degrees.
Once the knife has reached the correct temperature,it is swiftly removed and hand beaten to attach the steel to the soft iron.
After that,the temperature is lowered,and the forging process is separated.By doing so,the inside of the blade is strengthened.This results in a long-lasting
blade that’s easy to sharpen and won’t easily chip.

We use a material in which steel is sandwiched from the beginning.
First,the steel is hand beaten to lengthen the part of the knife that will go into the handle‘komi’.Then,the heel of the knife is created.
Next,the forging process begins.Depending on the stage of the process,the temprerature is lowered and the knife is shaped until reaching the target shape.
By lowering the temperature during the forging process,the inside of the blade is strengthened.This results in a long-lasting blade that’s easy to sharpen and won’t easily chip.
Once the forging is completed,the shape of the knife is perfected with a grinding stone.
Then,the blade is tempered,quenched and sharpened with a rotating whetstone.Lastly,the knife is buffed and polished.
*There are approximately 35 steps in the process to create a final product.
